Measuring the moisture and oil levels in olivesbecomes a critical measurement for growers as thecontent of each actually determines how muchgrowers are paid for their crop. Also measuring theamount of oleic acid in the olives determines theirquality.

When processing olives, they require milling andgrinding to extract the oil which requires the olives tofirst be ground into a paste. As the paste is created theolives cells break down which releases water and oil.When creating olive oil, the solids are separated fromthe mix. Olive fruit residues and water in unfiltered oilforms a sediment which quickly oxidizes andnegatively impacts the final product.
